After then Before

Sorry these pics are out of order but my computer is being dumb and I am tired of fighting with it. Anyways~when we moved in our yard was a big dirt lot (the last pic in this blog) and now our yard is on its way to being done! Here is a preview of what we have going :) Yeah!! I even have a big flower box that I am going to grow tomatoes in next year, yipee!!!!

How I feel...

I know this is a bit of an exaggeration...but seriously I feel like this and feel like I look like this. I took a pic today of me and my favorite fur butt and when I looked at it I about fell over, alls I could think is when did I start looking old? oh well it happens to all of us and I guess I would rather grow old with my honey then the alternative route.

This weekend, Cory and I caught up on some movies. I was really suprised at Slumdog Millionaire and The Curious Case of Benjamin Button. I really didn't think I would like either of them and they both turned out to be pretty good! Check em out if you haven't already!!!

Yeah, I have 10 million new recipes to try!!

As some may have noticed by the blogs I dig there has been alot of new additions...and they all have one thing in common, cooking!! I love trying new recipes and have been in recipe heaven since I have ran across all these cooking blogs! At least once a week I have try a new recipe night at my casa :) I have the best husband because he is game for anything I throw on his plate :) Now, sometimes I really get on a roll and everynight for a week is new recipe night...sometimes those don't turn out so well and Cory well beg that the following night I cook something we know we like, but hey if I don't try new things we will never know, right? Well stumbling on all these awesome blogs I have printed a million new recipes to try but here are a few that I want to make asap :)

Turkey Chimi's from Simple, but delicious.

Turkey Chimichangas

Ingredients:
1 lb ground turkey
1 small red onion
1 green pepper
1 tsp chili powder
1 can diced chilies, drained
8 oz of salsa plus additional for dipping
1 cup lowfat cheddar or taco cheese
1 serving cooking spray (5 1-second sprays)
low or non-fat sour cream for dipping
6 burrito sized tortillas

Directions:1. Preheat oven to 350. Coat a large skillet with cooking spray. Coat a 13x9 pan with cooking spray. Wrap tortillas in foil and heat for 10 minutes.2. Add turkey, onion, and green pepper to skillet until lightly browned, about 5 minutes. Drain any excess liquid and add salsa, chilies, and chili powder. Cook until heated through, about 3 minutes. Stir in cheese until starts to melt.3. Assemble chimichangas by evenly distributing mixture among tortillas. Fold in sides and roll up. Place in prepared baking dish and cook for 20 minutes, until tortilla are crisp. Optional: Place under broil for a minute to brown. Serve with 2 tablespoons salsa and 1 tablespoon sour cream


Rosemary and Onion Focaccia also from simple, but delicious

Ingredients:
1 1/2 cups (12 ounces) warm water
3 tablespoons (1 1/4 ounces) olive oil (plus additional for drizzling)
1 1/4 teaspoons salt
3 1/2 cups (14 3/4 ounces) Unbleached All-Purpose Flour
1 tablespoon instant yeast
1 teaspoon dried rosemary, crushed
1 small red onion , thinly sliced and separated into rings
1/4 cup Parmesan cheese, grated

Directions:
1. Lightly grease a 9" x 13" pan, and drizzle 1 to 2 tablespoons olive oil in the bottom.
2. Combine all of the ingredients, and beat at high speed with an electric mixer for 60 seconds.
3. Scoop the sticky batter into the prepared pan, cover the pan, and let it rise at room temperature for 60 minutes, till it's become puffy. (it wasn't noticably rised for me.I thought I did something wrong but it came out fine)
4. While the dough is rising, preheat the oven to 375°F.
5. Gently poke the dough all over with your index finger.
6. Drizzle it lightly with olive oil, and sprinkle with rosemary and parmesan. Cover the dough with the onion rings.
7. Bake the bread till it's golden brown, 35 to 40 minutes.
8. Remove it from the oven, wait 5 minutes, then turn it out of the pan onto a rack. Serve warm or at room temperature.
