It's only been like 7 months....ok so maybe a long time. In
my defense I have actually still been blogging. Just not
here. See all the blogs I follow on the right side of my blog?
Ya, I am a little obsessed with food blogs, so I decided to make
my own!!! So yes I am still here...just not here. :) Come see me at

gone at all.

P.S. My last post of my adorable new, tiny baby...ya he is still
adorable just not so tiny anymore. More like 22 pounds of a happy baby...

Pregnancy Thoughts

Pregnancy is something that unless you go through it you will never really understand it. I can say this now that I have managed to get through the past 9 months. I'm not going to pretend that I understood pregnancy before or that I even wanted to or cared to understand it. I was not the least bit sympathetic but now I have a whole new admiration towards woman and what we are capable of. There really are no words to truly describe pregnancy. It is hard and tiring and this extra weight that has crept up on me is unmanageable and uncomfortable. But, even with all that pregnancy is truly amazing. When you feel your baby moving inside of you, it truly is one of life's greatest moments.

We are about to embark on our next journey....tomorrow we should be welcoming our newest addition. Our love for baby Slane already is amazing considering we have never met the little guy. Our worlds are about to never be the same, ever. We are both excited for that journey and we can't wait to met the little man who has had control over mom for almost a year now. As Cory told Kramer the other night, "Kramer we get normal mommy back soon. Not pregnant mommy." Which translates into mommy who doesn't spill crocodile tears with a drop of a coin or can turn into Satan's spawn at the drop of a hat :)

In the pregnancy process I have come to realize how much of the burden is on the female partner. She's got a construction zone going on in her belly.

Book club favorites

I have been in book club for a few years now and in that time I have read some really good books and some really bad books. I thought I would list my favorites in case anyone is looking for a good read.

This has been my absolute favorite.

Another great one that is coming to a theater near you this summer.

We just finished this book and it was great!

This book is more of a "hard" read but it is great and also coming to a theater near you next winter.

New Goal

To quit printing off every recipe that looks good to me....I have hundreds of recipes that I can barely sort through let alone cook. Apparently I am also really hungry when printing these because today when looking at them I realize that a lot of them sound pretty disgusting ;) Plus, I can use some of my cookbooks that I always insist on buying.

New year, new resolutions, new baby!!!

New years is always a great time to make your "to do list" for the upcoming year. Last year I had big hopes and plans for what I wanted to accomplish. This year I am going to approach the new year a little more differently then I have in the past. I think this year my biggest change is going to be the baby joining our family. This is alot and I think that adjusting to mommy hood will be enough for me rather then worry about my resolutions too. So that being said there is 2 things for the year that I am going to try but I am not going to be to hard on myself if I don't accomplish it. The biggest two things will be resume my working out and second continue my love affair in the kitchen. I absolutely love cooking and hope to get in as many new recipes as I can in the next few months as I know our lives are about to be turned all around :)

2010 Where did you go?

2010 was a whirlwind of a year~Time flew so fast and things changed so quickly it is so hard to keep straight. I started the year wanting to log 500 miles of workout time in. I was unsuccessful and Cory was successful. I really hope this year proves to be more productive in working out, since I will need to lose some of this baby weight I have gained :)

With that being said, in 2010 I found the best workout ever, ZUMBA. I love it and can not wait to join all the girls again and shake it on the gym floor :)

I never got close to cooking every recipe in the cookbook like I planned but I am very hopeful that this coming year I will be able to make some new recipes again.

I hope Christmas was great for everyone. We had a wonderful holiday and feel so blessed with the arrival of baby Slane coming so soon! I am actually down to 11 weeks left, but that is not to say he won't come sooner :) Here is our family picture with baby Slane in 2010.

Of course, I can not forget to post a picture of the 1st baby furry Slane and his mommy :)

Cory and I are so excited to start 2011 and meet our new son in the next few months. We are excited and nervous about the change but know it will be worth it ;)

First of all, I would like to wish everyone a Merry Christmas. What are your plans this year? Cory and I will be going to my parents for our traditional Christmas dinner of prime rib and crab legs, yummo!! I can not tell you how much I look forward to Christmas dinner! I love, love, love crab legs ;) And since I don't eat prime rib I always get more crab legs ;) (See how that works!)

Second thing, baby Slane is doing great and apparently ahead of the growing curve of babies at his stage. He is almost 1 pound bigger then a baby is at this stage. I guess that means two things: one, he is really healthy and two, I might not be going till March. The doctor is watching him closely and if this 'growth spurt' doesn't slow down I will be induced, YEAH!!! I can't tell you how exciting that is for me. That would be mean no more hip pain, no more enormous stomach and I would be able to work out!!! I understand I could work out now but for one thing with the hip pain it really is not that easy and two walking doesn't qualify as working out :) Right now it might since it puts me out of breath but really....I would rather be at Zumba!! Oh Zumba I miss you!!!

WASHINGTON—The U.S. Department of Education released a comprehensive, nationwide evaluation of American schools Monday indicating that attempts to teach absolutely anything to these little shits is just a huge waste of everybody's time.

"We remain committed to providing every student in the country with access to a high-quality education," said Education Secretary Arne Duncan, adding that good schools are a key component to the success of American democracy. "But to be honest, none of that matters. We're not talking about promising young scholars here—we're talking about a bunch of fucking animals."

"We've basically flushed $11,000 down the toilet for every single one of these little bastards," Duncan continued. "Not to mention 18 years of my life."

The study, which analyzed the effectiveness of both public and private schools, found that efforts to enlighten these terrors on the subjects of math, history, grammar, and science are as productive as slamming your head into a goddamn brick wall. The research also confirmed that the unbearable shits, who take everything for granted, consistently piss away each learning opportunity they're given.

"When I first started teaching, I would see the smiling faces in my classroom and get excited about nurturing their young minds," said Melanie Whitman, 35, a first-grade teacher quoted in the report. "Now I can't look up from my desk without wanting to puke at the sight of all those little psychopaths."

Secretary Duncan said the study is the first to provide detailed evidence in support of the theory that third-grader Scott Kriesel is a complete fuck-up and perhaps even the living incarnation of Satan.

According to the report, billions of dollars in federal resources have been spent to modernize classrooms and improve teacher training, even though the little brats spend their entire days carving profanities into desks, shouting at whoever's in charge, and refusing to sit down, shut up, and actually learn something for once.

In addition, research suggests that school boards across the nation have grown tired of fighting to obtain funding for brand-new textbooks only to have the miserable fucks just deface them all with ejaculating penis drawings on the first day of class.

When asked if charter schools might help solve some of the problems faced by public education, Deputy Education Secretary Anthony W. Miller told reporters the data indicated any difference they made would amount to jack shit.

"Some charter schools perform better than their public counterparts, some don't," Miller said. "You can't change the fact that any school, no matter how it's funded, is ultimately just another type of building to contain these goddamn monsters for seven hours a day."

Miller added that more involvement from home was not the answer, either, as the little shits tend to have shithead parents who just make everything worse. The only findings from the study that provide a glimmer of hope, he said, are student absenteeism and dropout rates, which continue to increase.

"Christ, I dedicated my career to my students, actually thinking I could make a difference in their lives," middle-school teacher Joan Kubickers said Monday. "If I'd gone into public relations, I'd be making six figures by now. And at a PR firm, I bet I wouldn't have to worry about my tires getting slashed in the parking lot."

"Well, I have to go," she added. "The fucking hyenas in my third-period class await."

The Department of Education study comes on the heels of a survey last month that found 90 percent of all elementary school students resent being taught by pathetic losers who couldn't get a decent job in the real world.

Awhile ago I stated that Cory quit logging miles....after he read that he wanted me to clarify that he hasn't quit logging miles, he just quit logging them on my sheet. He has joined a new program at work where he wears a pedometer and logs them on to his system for work. Well maybe I shouldn't have said anything because I had no idea how far he really walks all day long...so here is our mile update with his miles from his work program.

Yummy new recipe!

Who doesn't like a chicken pot pie? I love them, except for the peas and carrots..ewww! This weekend I made my own pot pie recipe and it was wonderful. Cory even really liked it after he had made a eww gross face when I told him what was for supper ;) Like I said, I don't like the peas and carrots in my pot pie and since I made my own I got to choose whatever I wanted to put in it and it was yummy. The best thing was how easy it was to assemble.

The pie had:

1 can drained chicken
1 can cream of potato soup
1 can cream of chicken soup
1 can drained new potatoes sliced
1 can drained mushrooms
some shredded cheddar cheese (however much you like, I used about 3/4 cup)
a dash of garlic salt
a dash of thyme

I bought a pre-made pie crust and put the first crust on the bottom. After mixing the ingred. in a bowl I added them to the dish & then placed the top pie crust on top. Slit the top for steam to escape in a few places, bake at 400 for 30 min. w/ foil around edges, take foil off bake for 30 more min. and you are done! We had to let ours cool for about 20-25 min. Yummy! A definite rotation recipe for us now :)

While these pictures are slightly horrifying compared to food blogs that I read all the time, I just had to share a pic. of my 1st cheesecake. It was delicious and divine...and totally sinful. Cory is sad to hear that I will be giving most of it away since I highly doubt we need to eat the entire thing ourselves :) I got this recipe from Bakerella and I think I have found my 'keeper' recipe for plain cheesecake. While my cheesecake did crack, I am not to worried about that. Hey its not like I am the cheesecake factory here.... Have I mentioned before that cheesecake is my favorite dessert in the entire world? Yummy!!!!!!

Cheesecake- (check out this website www.bakerella.com)

2.5 cups graham cracker crumbs
2 Tbsp sugar
1/2 cup butter, melted

4 (8oz.) packages cream cheese
1.5 cups sugar
3 Tbsp flour
5 eggs
1 cup sour cream
1 Tbsp vanilla
1 Tbsp lemon juice

* Preheat oven to 325 degrees
* Combine graham cracker crumbs and sugar.
* Stir in melted butter until moistened.
* Pour the mixture into a 9-inch springform pan (3 inches tall). Press the crumbs into the bottom and 1 inch up the sides of the pan.
* Bake for about 10 minutes. Remove and cool to room temperature.

* To make the cheesecake filling, cream the sugar, cream cheese and flour with an electric mixer on medium until light and fluffy.
* On medium low, add eggs one at a time, mixing well with each addition.
* On low, add sour cream, lemon juice and vanilla just until combined.
* Bake for about 1 hour and 15 minutes at 325.
* Make sure to take it out of the oven before the center looks done. It will be kind of wobbly and it will move in one piece. The center will look more shiny than the edges. That’s ok because it will continue to cook a little while it’s in the pan.
* Remove from the oven and let cool completely to room temperature.
* Hope that it doesn’t crack.
* Go ahead and separate the cheesecake from the sides of the pan by running a knife around the edges. I also opened and reclosed the springform pan to help separate.
* Chill in the refrigerator overnight. That’s right. It’s best to make this the day before because it needs plenty of time to chill and firm up.

I have been super excited about our garden this year! It seems like one day I had nothing to now a garden full! We have 19 jalapenos, 2 banana peppers (so far), zucchini, rhubarb and tomatoes!! Here is a pic of a zucchini and jalapeno I picked on Friday ;)

Hello there!! How is everyone in cyber-space world?? We have been extremely busy, Cory with work, me not so much but lots of other stuff!

Where to begin? Well I and my friend Amanda hosted a bridal shower a few weekends ago. We are both Ms. Denise's maids of honor, I am so glad to be paired up with Amanda she is seriously the sweetest girl in the world! Here is a few pics of the shower....we have been planning and planning and planning...so nice to have it done.

The theme was head over heels and Denise's colors are pink and black. So naturally everything was in those colors and high heeled theme. Check out this cake!!!

So excited for the wedding, it is going to be gorgeous!

What else is been going on? Not to much. Have tried to plant a few things outside and they have died. I guess I jumped the gun a little but I'm so excited for growing some good stuff and the pretty flowers!! My tomatoes that are in my grow box are doing wonderful though and have grown I would say 4-6 inches already! Look out-we are going to have some tomatoes this summer! (I hope) ;)

Oh ya, I am still going to Zumba steady and strong! They are starting a class at 5:30 am and I am pretty sure I will be frequenting that also. I really enjoy that class and if I could do it 7 times a week I would! Oh ya, so here is a pic of last nights class...can you spot me? Cory did immediately....sigh...Love him!

Oh ya, also if you are a work out girl/guy like I am trying to be you are going to love this stuff!!

Seriously...check it out. I love it...I look like I have left a sauna after wearing it but it makes the workout seem that much sweeter!

Vegas

As many of you guys may know I went to Vegas for a girls weekend! We had alot of fun and I am really glad I went. I was very hesitant about going...I felt really bad about leaving Cory home but after much persuasion and begging from friends they talked me into it. Update on cooking!!

I have made a few recipes out of my cookbook and its going well! Last night I brought an anti-pasta to book club and the girls loved it! They were pretty excited about my new mission with cooking the entire cookbook and thought I should also blog about it :) I just don't feel like I have enough to say or am witty enough to do that but I will keep everyone posted!

Next month I host book club and I am super excited! I have a few recipes I will be trying out on all the girls!! Not all of them are from my cookbook challenge but seriously I have about 10 gazillion recipes that I want to try so I can not only make things from the cookbook ;) I get to choose the book since I am hosting that month and I chose Hungar Games. I hope it is pretty good!

Not much going on around here. I have been busy doing Zumba while Cory has been busy logging miles and now he is officially ahead of me ;( Wish I could count Zumba for miles...sigh....

This weekend Cory and I went to Iron Man 2. I really didn't think I would like it....I was wrong. I actually really enjoyed it and Cory liked it alot too.

Today, Lacey and I went to The Back Up Plan. We loved it! It is so funny :) Did make us question if either of us wants kids....LOL!

Diet ramblings

When I read this from The Amazing Adventures of Dietgirl I had to laugh a little. Because its so true, whenever people are on a diet we want to talk about it! I have been rambling for months now on this blog probably causing people to fall asleep mid-reading of my blog! But that's ok cuz I like talking about it, it makes me feel accountable. This is what she had to say about it:

Talking about Weight Watching at Diary of a Mad Mammy - "I’m not sure what it is about being on a diet that prompts us all to talk about it so much. Maybe because we want people to acknowledge the effort we are going to. Maybe we want to revel in the moments when people tell you they notice a change to the shape of your hips, the girth of your belly or the number of chins you have. Maybe we want people to know that, yes, as much as we may be on the hefty side now, we are doing something about it honest and don’t intend to be gulpens the rest of our days."

So how is my healthy living going? (Notice I am not calling it a diet....a diet just feels to restrictive and everyone falls of a diet eventually) Pretty good, I have lost 11 pounds...only 1 from last month but I did go to Vegas and believe me there was nothing healthy about that! :) I am still pretty proud of my 11 pounds, I am getting pretty close to high school weight which I never really thought would happen. Will I get there? Probably not. But I will take close to that weight ;)

I remember something similar to this last spring. I don't know how but Kramer always manages to find the only mudhole in the desert. We thought we were just by a spring but he somehow found a hole that went waist high! Silly dog ;)

After I got back from Vegas it was apparent my boy missed me real bad. He didn't leave my side for 2 days!!

Gooseberry All through the Seasons

It has been decided! I will attempt making every recipe in Gooseberry All Through The Seasons!

I chose this book over my others for the following reasons:

*Gooseberry recipes seem to be a little easier and more realistic to what Cory and I eat. We don't eat duck (Julie & Julia)
** This cookbook and the Christmas one (alot like this book) are my FAVORITES!!!
***I can read and understand these recipes! Plus, I know what the ingredients are. Don't you hate reading a recipe and having no clue what the ingredients are or have a clue where to get them.

Have you seen Julie & Julia? I loved it and I loved the whole idea behind it? Cook a whole entire cookbook and blog about it? I love it!

I loved it so much that I decided I want to cook a whole cookbook of recipes! Will I blog about it all? No, definitely not. Maybe bring it up? Possibly! We will see!!
When I told Cory he had about the saddest look on his face, he definitely is not as excited about this is I am but he said he will be my supporter and taste tester :) I will let you know when I decide what cookbook I choose, however I can guarantee it won't be a cookbook about mastering the art of french cooking!!

Yesterday I went running except my running partner was not another friend it was Kramer. And instead of looking like the picture above, I looked like I was getting dragged down the street by a 83 pound creature...which I was. I guess it didn't go to bad but I am definitely not used to running with Kramer. He would sense I was running and he would go full throttle. After he got tired from the heat it wasn't to bad...then we were in sync' :) Is running my thing? I don't think so but I really need to switch it up a bit and I need to work on my miles...who knows I might get better in time. However, this morning I am going to Zumba, my love!!! :)

I hope everyone had a wonderful Easter holiday. We had a great time at my parents house but both Cory and I ate way to much. I know by now that when I eat to much I am in terrible pain...my stomach can not handle it! So after our huge feast of turkey, ham, salads, potatoes, dressing, cheesecake, pie, etc. we both ran home to be sick and miserable all night long....I am never doing that again! I don't care if the food is the best thing I have ever tasted :) It truly is all about moderation...

Can you believe Easter weekend is already here? I sure can't.....What is everyone going to be doing this year on Easter? Cory, Kramer and I will be joining my parents and some of their friends for a delicious deep fried turkey and ham dinner. I am super excited this year because I am bringing dessert! Miles Update...

Cory and I have not been doing very good on our miles. I still have been working out but I have been doing alot of Zumba instead of the treadmill. I really enjoy the dancing rather then the same ol' same ol' that the treadmill offers....that being said I am at about 67 miles for this year and Cory is at 55 miles for this year. However, I am excited to report that I have gone down 10 pounds and one size so I think the zumba/eating right is helping out!! :) I am every excited about my progress in working out in general and learning how to eat more healthy.

It is so hard to eat healthy on a budget...it's true...the processed crap you buy at the supermarket is much cheaper then the healthy outskirts of a supermarket..think veggies, fruit, etc. you really do get more bang for your buck if you eat the bad stuff....

Yesterday I tried out a Zumba class and it was so much fun. It really made you feel like you were just having fun...not like how a workout feels when you are staring at the clock wondering if it is ever going to end. If you ever get the chance to take a Zumba class I highly recommend it, it is a great work out and so much fun!!!

I made the chicken spaghetti last night and if I was a true blue food blogger I would have taken a picture of it and posted it....however...I forgot and I am not the best true food blogger...(if you are looking for some good ones I have a ton of links on my page go check em out! one of my faves is Annie Eats) (I wish I was however none of the recipes are my own so I don't know what that makes me) Anyways, it was ok. I will have to change it up when I make it again. Cory said there was to much onion so that scared him away...but overall I like it ;) Anyways tonight I am making a tried and true recipe that is delicious!!! I thought I would share it with you if you are looking for something to mix up chicken a bit...we have chicken 3-4 times a week so I really like finding new ways to cook it. This recipe is from Rachael Ray and it is Yum-o as she would say!

Pesto-Presto Italian Flag Chicken

INGREDIENTS:
5-6 leaves basil
1/4 cup flat leaf parsley leaves (about a handful)
2 tablespoons pine nuts, toasted
1 block soft garlic and herb cheese, such as Boursin brand
1/2 cup grated Parmigiano Reggiano cheese (about 2 handfuls), divided
4 tablespoons extra virgin olive oil (EVOO), divided
Salt and freshly ground black pepper
4 boneless, skinless chicken breasts
2 large tomatoes, thinly sliced
PreparationPre-heat the oven to 450ºF.

In the bowl of a food processor, combine the basil, parsley, pine nuts, soft cheese, 1/4 cup of the Parmigiano Reggiano (about a handful) and some salt and pepper. Process into a smooth paste. Reserve.

Butterfly each of the chicken breasts and pound them out lightly in a plastic bag with a dash of water using a skillet or meat mallet. Season both sides of the chicken and divide the herb-cheese mixture between the four breasts, placing a scoop on one half of each breast. Fold the flap of chicken over to enclose the cheese mixture.

Transfer the chicken pockets to a baking sheet and lay three slices of tomato over each breast, overlapping them like shingles. Season with some salt and pepper, drizzle with about 2 tablespoons EVOO and sprinkle with the remaining Parmigiano Reggiano cheese (about a handful).

Bake the chicken pockets until cooked through and light golden brown, 20-25 minutes.

Every week I whip out my cookbooks and bazillions of printed out recipes and pick some newbies to try. I am excited this week with a ton of new recipes to try out on Cory. One recipe I am anxious to try is Chicken Spaghetti from The Pioneer Woman. I ran across this recipe in a magazine and since then have became an avid reader of her recipes and blog ;) Here is the recipe if you decide to try out a newbie this week :) If this isn't something you may like go check out her website there is bound to be something you will love~

Ingredients

* 2 cups Cooked Chicken
* 3 cups Dry Spaghetti, Broken Into Two Inch Pieces
* 2 cans Cream Of Mushroom Soup
* 2 cups Grated Sharp Cheddar Cheese
* ¼ cups Finely Diced Green Pepper
* ¼ cups Finely Diced Onion
* 1 jar (4 Ounce) Diced Pimentos, Drained
* 2 cups Reserved Chicken Broth From Pot
* 1 teaspoon Lawry's Seasoned Salt
* ⅛ teaspoons (to 1/4 Teaspoon) Cayenne Pepper
* Salt And Pepper, to taste
* 1 cup Additional Grated Sharp Cheddar Cheese

Preparation Instructions

Cook 1 cut up fryer and pick out the meat to make two cups. Cook spaghetti in same chicken broth until al dente. Do not overcook. When spaghetti is cooked, combine with remaining ingredients except additional 1 cup sharp cheddar.

Place mixture in casserole pan and top with remaining sharp cheddar. Cover and freeze up to six months, cover and refrigerate up to two days, or bake immediately: 350 degrees for 45 minutes until bubbly. (If the cheese on top starts to get too cooked, cover with foil).

*** I will be changing a few things for our personal taste. I will be leaving out the green pepper because Cory CAN NOT STAND ANY TYPE OF BELL PEPPER and I will be making the chicken in the steamer because its easier and healthier...hey got to make it healthy in any small way I can (I also use whole wheat pasta, we actually prefer that now) ;)

Well this last month was not near as productive as we had hoped. With Cory having his surgery and my feet we hardly made a dent in our 500 mile goal...bummer...oh well...I am going to hop back on the track today and hopefully be way more productive this March ;)

Miles update!

Well it is not officially the end of the month and I am not sure how many miles we will get done today however I wanted to update you on our progress. I personally didn't get as many as I would have liked to get but I didn't start till around Jan 11th either (I wasn't feeling to good the first part of the month). Plus I have thrown in some Turbo Jam and Chalean Extreme workouts and I don't count those days as any miles :) Next month I hope to get... I don't know around 10 miles more or so...stay tuned for end of month Feb. update to see how I did!

Cory=22.75 miles done / 477.25 miles to go!

P.S. I have an advantage over Cory since I workout on my lunch break :) Otherwise I am sure he would be way ahead of me!

This machine is amazing... I have steered away from it in the gym the past few weeks and today I thought I would give it a whirl. OMG, it is so hard! I thought it was just a fancy elliptical but apparently it is called an Adaptive Motion Trainer. Wowzers it whooped me a good one :)

After going to the gym on my lunch hour I am completely starving when I get back to work. My lunches seem to be ok but not really that great since I am being so conscious of what I am eating. Today as I opened my can of soup with no real enthusiasm other then it would stop the hunger pains I never thought I would fall in love with it. But oh my gosh, it is delightful and oh so satisfying.

This Progresso Hearty Tomato is yummo in my book!!

I feel so bad for my little fur-butt...or not so little fur-butt according to the vet. A few months ago the vet commented on how Kramer was a little "tubby". Now all us mommies ;) (hehe) know that it not only hurt Kramers feelings, it hurt mine as well. So after that I kinda forgot until others have started mentioning Kmans size and weight :( So, 2 months ago we put Kramer on a diet. Now Kramer hates his diet as much as any other person hates dieting. He is such a drama queen when he wants more food he will cry, bark, throw his bowl, lay in his bowl....you name it he has done it...all in the name of getting some more grub! Well where am I going with this you ask? Well today I went to the vet with Kramer for his shots and I was so excited for Kramer to finally be able to measure his success (the big weigh in). Drum roll please.......................................

Kramer has put on 2 pounds! How is that possible? We have cut back his food 2/3!!! We used to give him almost 9 cups a day and now he only gets 3!!! Poor guy! I stood in the vet astonished... How is this possible?

Some may wonder why I am throwing out my personal resolutions on our blog...
Accountability. I am hoping it makes me work just a little harder.

I read alot of fitness blogs to that inspire me and sometimes they even come comment on mine :)

Another goal of mine this year is to get a bit healthier which I assume you know from my 500 mile challenge! Well I also want to do that by eating....so I stumbled upon a great list that I think I can fit into my life style from

–decrease portions 15-25%

–drink more water

–1 treat meal and 1 treat dessert a week still being mindful of portion size (I am not going to lie...this is going to be hard for me)

–fruits and veggies at every meal

–focus on healthy carbs

-don’t skip meals

-food journal

–keep alcohol in check. She said 3-4 drinks a week or less is fine. For those drinking 6-12 or more, cut 25-50%.

–cut back on processed and artificial foods and sweeteners as much as possible.

–increase exercise by 15 minutes a session or increase intensity

**I already have a head start since I have been keeping a food journal, I have been trying to drink more water and I am trying to eat more fruits and veggies!!

Well 2010 is here and it is that time to think about what you want for the new year.
I have a huge list of things I want to accomplish this year and I am very hopeful that I will accomplish them before 2011 :) One thing that is on my list this year is, I resolve it get more fit. This is a traditional one for most girls I think :) I decided instead of saying I need to lose x amount of pounds, or I am going to work out every single day in 2010 (ya right) I would try a different approach. Because in the end it is about getting healthier.

So, how am I going to accomplish this? Well my inspiration came from this blog entry from a blogger that I like to read.

In this blog she said that she ran 1230 miles in 2009! Wow that is a huge accomplishment!! Now, I know better then to think I can start off running over 1,000 miles in a year. However I don't think 500 miles is that out of line. However, I am going to switch it up a bit. I am going to log runs, walks, cycling, stepping, etc. in to my 500 miles. If I go by just running I will never accomplish that because I will get incredibly bored. I have been trying to convince Cory to join me to make it a little more competitive so hopefully I can get him on the bandwagon too!

Now, why am I sharing this you ask? Well I am hoping that if I put it out there and have a somewhat "cheerleading" section it will be a little more motivational. I will be 'checking' in periodically with updates on how many miles I have gone!

My New Favorite Cookbook!

I bought this a few months ago and it is awesome! The manicotti is to die for, the curry chicken casserole is yummy, the pumpkin roll with nutmeg sauce was delicious (once I figured out how to roll it, LOL) and the cheese ball I brought to book club was a hit! I have recently bought a few of these for a few friends (who hopefully are not reading this blog, but I don't think they do) for Christmas. I also have hooked 2 co-workers on it who also have bought this book! Go check it out :)

Homemade Tomato Soup

I recently came across a recipe for homemade roasted tomato soup, it looked wonderful and sounded great! So I ventured yesterday on my first pot of tomato soup...not from the can :) Here is a pic of it in the process....I wish I could say it turned out great...but I think it was a bust....hopefully I will come across a better recipe soon. However, roasted tomatoes are pretty good try them sometime!

I am pretty proud of my green chili...it took me several attempts at finding the perfect recipe and I found it. I made a huge bucket of it for my fiesta party I threw and I think it was a hit!!

It's been awhile since my last blog but I have been pretty busy. Cory and I actually just got back from Mexico last night so we are still recouping from that fun trip!! Of course the most important reason we were there, Kari & Mike's wedding, it is all said and done. Congrats!!! Kari was a beautiful bride and the wedding was gorgeous!! I don't think its fair I post any of her wedding pics before she even gets back but here are a few of all of us in Mexico!! More to come soon...

P.S. There was 16 of us in Mexico for the wedding and do you think I have on group pic? Oh well, I am sure Kari will have some ;)

This weekend, Cory and I caught up on some movies. I was really suprised at Slumdog Millionaire and The Curious Case of Benjamin Button. I really didn't think I would like either of them and they both turned out to be pretty good! Check em out if you haven't already!!!
